Prawn fritter salad
THIS week, we are planning to present one of Myanmar’s traditional foods that makes anyone who has tried it crave to eat it again and again. It is prawn fritter salad.
Prawn fritter salad is a type of Myanmar salads that is especially loved by Myanmar people, combining crispy fried prawn fritters with sour, salty, and spicy flavours. It also contains noodles, making it a dish that is enjoyed by foreigners as well.
So, here is a recipe and method for making and mixing a delicious prawn fritter salad, which is enjoyable to eat.
Ingredients (For the fritter)
1. Prawns – 10 pieces
2. Tempura flour – 150 grammes
3. Bean sprouts, thoroughly washed
and drained – 500 grammes
4. Salt – ½ teaspoon
5. Seasoning powder – ½ teaspoon
6. Turmeric powder – ⅓ teaspoon
7. Water – 1 cup
8. Oil – approximately 1.5 litres
(For the salad)
• Fresh noodles
• Fried tofu
• Thinly sliced cabbage
• Long beans or cucumber
• Fried onion oil (onion-infused oil)
(For the dressing/sauce)
• Ripe tamarind
• Fish sauce
• Green chillies or sour chilli oil
• Seasoning powder
• Roasted bean powder
Preparation method
• Wash the prawns thoroughly and remove the dark vein from the back.
• Mix tempura flour, turmeric powder, salt, and seasoning powder with water and stir until smooth, then add the bean sprouts and gently mix.
• Place a small amount of the batter-coated bean sprouts along with one or two prawns on a flat plate and arrange them neatly.
• Cut the fried tofu into small cubes.
• Prepare the fresh noodles in advance.
• Wash the cabbage and cucumber thoroughly and slice them.
Step-by-step preparation method
• Heat the oil over medium heat. On a plate, place a small amount of the bean sprout mixture together with one or two prawns, then gently slide it into the hot oil. Fry until one side turns golden and becomes crispy. (Be careful not to use high heat. When one side turns golden, flip it over. Once both sides are golden brown, remove and drain the oil.)
• After draining the oil, the prawn fritter is ready.
• (Alternatively, if using molds to make the prawn fritters, you can place the seasoned bean sprout mixture and prawns into a mold and then deepfry it in hot oil.)
Preparing the sauce
• Soak ripe tamarind in hot water and squeeze out the juice.
• Add fish sauce, chili, and seasoning powder to the tamarind juice, then mix well to create a sour, salty, and spicy flavour.
Mixing the salad
• In a large mixing bowl, add the fresh noodles, sliced cabbage, cucumber, and fried tofu cubes.
• Add fried onion oil, roasted bean powder, and the prepared sour sauce, then mix well until evenly combined.
• Finally, place the prawn fritters on top and gently toss. The dish is now ready to be served and enjoyed. —MOON
